With homemade tonic it gets even better.Cinchona bark and sparkling water, tonic water, was used as medicine against malaria in the 1700s. Now a days it is an obvious ingredient in one of the worlds most popular drinks, gin & tonic. It is lots of ways to mix the simple drink do to personal preference, but with your own homemade tonic you can really elevate this to new hights.
4 cardamom pods
4 whole allspice berries
4 tsp citric acid
30 g cinchona bark (order it here)
1 l water
Grate the peel off the lime and lemons, chop the lemongrass and have it in a big sterilized jar with the rest of the ingredients. Seal the jar and let stand in the refrigerator for 3 days. Turn it upside down once a day. Double strain through a cloth until it is clear. Bottle and keep in the refrigerator for until three weeks. You can also fill it in an ice tray and freeze it.For use in a gin & tonic, use 1 part tonic essence, 1 part simple syrup (1:1) and 5 parts sparkling water (like Farris) mixed with 2 parts gin.
